![]() ![]() This really should restore more than just 1/4 heart. Serve a heaping ladle full of monster curried vegetables alongside the fluffy rice while still hot. Basmati is a soft and airy form of rice, so after uncovering, be sure to fluff it up using a fork. Cover and reduce heat to low, cooking for 15 minutes before uncovering. Bring 1 3/4 cups of water to a boil and add the rinsed rice. Prepare the rice by rinsing it in cool water. Once the vegetables are cooked through, stir them all together in a large pot, adding the purple curry paste and heat through, only for a few minutes. If the pan dries out, then add a splash of water periodically as needed. Lastly add the cabbage to the pan and cook for another five minutes, at which point all the vegetables should be soft and tender. To the same pan, add the carrots and cauliflower and cook for another five minutes, continuing to stir often. In a splash of olive oil, pan-fry the onions for five minutes, stirring often. Scrub and coarsely dice the purple potatoes (they are thin-skinned, so no need to peel) dice the red onion roughly chop the head of cabbage and head of cauliflower and peel and trim the purple carrots, removing the leave ends and slicing into 1/4" pieces.īoil the potatoes for 20 minutes until tender and easily pierced with a fork. While the beet is boiling, prepare prepare the remaining vegetables. It should be soft, and easily peel in your hands.īlend the softened beet with the blueberries and curry powder to create the Monster Extract. ![]() Remove the heat and let cool until safe to handle. ![]() Bring a small pot of water to a boil, with enough water to completely submerge the beet add the beet and boil for 90 minutes. ![]() Many of these steps can be done concurrently to save time. ![]()
